Erko Ruukel

Erko has an interesting job. He is a cook by profession, just like several other authors of our cookbook, but the job of a cook at Vapiano is not a usual one. Vapiano offers fast food – quickly made food – in an environment that is characteristic of slow food restaurants. The management of fast but uncompromising cooking is a challenge to any head chef.
