Apple cake with a hint of olive oil and almonds


Whisk eggs and sugar. In a separate bowl combine ground almonds, flour, vanilla sugar, baking powder and salt, then add to the egg mixture. Finally add Greek yogurt and olive oil into the batter and mix until well combined.
Line the base of a 20 cm springform cake tin with baking paper and grease the sides. Pour the batter into the tin, chop the apples and scatter on top of the batter. Sprinkle sugar, small pieces of butter and almond slices on top.
Bake at 180 degrees Celsius (fan setting) for 40 minutes. Before serving garnish with powdered sugar.
