Apple loaf


  • 3 large apples (about 300g)
  • 1 tbsp lemon juice
  • 2 eggs
  • 1 dl + 2 tbsp dark muscovado sugar
  • 200 g sour cream
  • 2 dl raw buckwheat flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 2 tbsp cinnamon
  • 1 tsp cardamom
  • 1 tsp powdered sugar 
Core the apples and chop. Squeeze on lemon juice and mix in 2 tbsp sugar and cinnamon, set aside. Whisk eggs and sugar, add sour cream. In a separate bowl mix flour, baking powder, baking soda, salt and cardamom. Add dry ingredients to the egg and sour cream mixture, mix until well combined. Pour half of the batter into a paper loaf tin or into a smaller 15cm diameter cake tin. Scatter cinnamon and apple mixture on top of the batter and pour the rest of the batter on top.
Bake at 180 degrees Celsius for 30 minutes or until a cocktail stick inserted in the middle comes out clean. Allow to cool and sprinkle on powdered sugar.
