Pomelo salad


  • 1 pomelo
  • 150 g green beans
  • 50 g wakame
  • 1 small courgette
  • 1 pomegranate
  • 1 tbsp (black) sesame seeds
Peel the pomelo with a knife, separate the flesh from the leathery film and place in a bowl. Boil the beans in salty water until slightly tender (about 5-7 minutes), rinse with cold water immediately and add to the bowl. Cut the courgette into thin strips and add to the salad. Peel pomegranate and add the seeds to the salad along with the sesame seeds.


  • 1 small chilli
  • 2 garlic cloves
  • 2 cm long piece of ginger
  • 1 tbsp sugar syrup
  • 1 tbsp sesame oi
  • 2 tbsp olive oli
  • 1 lime, juices
  • salt
To make the dressing finely chop the chilli, garlic and ginger. Add lime juice, oils and syrup. Mix until well combined and add salt. Pour the dressing over the salad and mix.
