- 2 chopped avocados (not too ripe)
- 1 dl white wine or apple cider vinegar
- 1 tsp mustard seeds
- 1 tbsp unrefined cane sugar
- 1 tsp salt
- 5-6 peppercorns
- 1 small chilli pepper
In a sauce pot mix vinegar, 1 dl of water, salt, mustard seeds, sugar, peppercorns and chilli. Bring to a boil and stir until sugar and salt have dissolved, then cool to room temperature. Place the avocados in a jar and cover with the marinade. Let stand for at least an hour.
Store in a cool place and eat as is or add to salads or sandwiches.
