Yellow courgette jam

  • 1 kg yellow courgettes
  • 330 g 1+3 jam sugar
  • 2 oranges
  • 3 lemons
Cut the courgettes into pieces. Grate the zest of the oranges and lemons, set aside. Squeeze the juice of the oranges and lemons into the pan, add the pieces of courgette. Cook until the courgette is tender, purée with a hand mixer. Add the citrus zest and jam sugar, cook for about 10 more minutes. Pour the mixture into clean sterilised jars without a lid and allow to cool.
