Apple jelly with juniper berries
- 1 kg tart apples, peeled and chopped
- 1 packet i.e. 330 g jelly sugar
- 10 fresh juniper berries, crushed
- 2 tbsp gin
- lemon juice
Put the peeled and chopped apples in a pot. Add 2 dl water, crushed juniper berries and bring to a boil. Simmer over low heat for 15 minutes or until the apples have softened. Press the mass through a sieve. Add jelly sugar, squeeze the juice out of a lemon and bring to a boil. Simmer over low heat for 10 minutes, add gin, heat through and transfer into hot, sterilised jars. Put the lids on immediately. Store in a cool place.
