Grilled apricots and halloumi with lettuce

  • 300 g halloumi
  • 6–8 apricots
  • 2–3 tbsp sugar cane syrup
  • Virgin olive oil
  • Juice of 0.5 lemons
  • Fresh lettuce and mint leaves, salt and pepper
Cut the apricots into halves and remove the pits. Place the apricots with the cut side up and halloumi on a grill grate and grill for a few minutes. Drizzle about half of the syrup on the apricots and turn both the apricots and the cheese over. Grill for a few minutes more and drizzle the rest of the syrup on the fruit. For the dressing, combine the lemon juice with the same amount of olive oil and season with salt and pepper. Place the lettuce and mint leaves in a bowl and add some of the dressing. Place the grilled cheese and apricots on the lettuce and drizzle with the rest of the dressing.
