Caramel apples with almond crust

For two

Ingredients:

  • 2 large or 4 medium sliced apples
  • 30 g butter
  • 3 sl dark muscovado sugar
  • juice of half a lemon
  • 2 sl Vana Tallinna liquor
  • 1 tl cardamom or cinnamon
  • handful of lingonberries
Melt the butter in a pan, add sugar and lemon juice and mix thoroughly. Add the liquor and allow it to bubble for a few minutes. Add the apple slices into the hot caramel and heat them for a few minutes on each side. Season with cinnamon or cardamom and add the lingonberries. Mix and scoop into a few smaller dishes or one large dish.

Crumb coat:

  • 2 sl ground almonds
  • 2 sl spelt flour
  • 2 sl unrefined cane sugar
  • 30 g butter
  • salt
Mix ground almonds, spelt flour, sugar and salt in a bowl. Work the mixture until it resembles coarse meal. Scatter the mixture on the apples and bake at 200 degrees Celsius for 15 minutes.
Serve warm with a side of custard or ice cream.
