Bone marrow sandwich
Malt bread:
- 120 g egg yolk
- 220 g egg white
- 20 g wheat flour
- 50 g malt flour
- 8 g salt
- 5 g sugar
- 30 g maltose
- 15 g kefir
Mix all the ingredients until smooth. Pour it into a siphon, add a NO2 charge and wait for 2 hours. Remove the bread mixture from the siphon to a plastic box and heat in a microwave oven for 45 seconds. Let the bread cool and remove from the box.
Pickled cucumber
- 1 l water
- Cucumbers
- 2 tbsp salt
- 1 clove of garlic
- Dill
Dissolve the salt in cold water; add the minced garlic and dill stems. Let the cucumbers season in brine for 12 hours.
Smoked egg yolk
Bake the egg yolk in a vacuum bag at 66 °C for 20 minutes. Press the creamy paste through a fine sieve and smoke it.
Bone marrow
- 90 g bone marrow
- 7 g parsley
- 15 g red onion
- 10 g pork rind crisps (as the technology of making pork rind crisps is long and complicated, it is easier to replace them with Ossi pork rind)
Slice the red onion thinly and chop the parsley. Fry the bone marrow in a frying pan and combine with the chopped parsley, onion and pork rind.
