Goat cheese patties with cloudberry jam
- 500 g Kalamatsi cream cheese made from goat milk
- 3 egg yolks
- 1 tbsp organic sugar
- 1 dl wheat flour
Rub the goat cheese through a sieve with a spoon; add the egg yolks and sugar. Add the flour and a pinch of salt and knead the ingredients into a smooth dough. Refrigerate the mixture for about 30 minutes. Sprinkle some flour on a plate. Shape the dough into balls, dredge them in flour and flatten with a spatula. Fry the patties until golden on both sides and bake in the oven at 180 °C for about 5 minutes. Serve with cloudberry jam.
