Nutty caramels
Ingredients:
- 50 ml water
- 150 g light muscovado sugar
- 1 dl light sugar syrup or glucose syrup
- 100 g butter
- 200 g nuts
- 20 g freeze dried cranberries
- 1/2 tsp salt
For flavour:
- 1-2 tsp gingerbread spice mix or 1 tsp ground cumin or 1 tsp ground paprika
Put the water and sugar in a saucepan and bring to a boil. Mix until the sugar has dissolved. Add syrup and butter. Allow the mixture bubble over low heat for 30-60 minutes (if using glucose syrup or if you prefer softer caramels reduce the time). Mix in nuts and spread the mixture onto a piece of parchment paper to cool. Scatter with cranberries. Allow to cool completely and break into bite-sized pieces.
