Strawberry chocolate pie

Makes 2

medium pies or 1 large pie Crust:

  • 140 g butter
  • 85 g sugar
  • 200 g flour
  • 1 egg yolk
  • 1 tbsp cold water

Filling:

  • 85 g dark chocolate
  • 0.75 dl whipping cream
  • 1–1.5 tsp lemon juice
  • 3 tbsp sugar
  • 1–1.5 tbsp cornflour
  • About 200–300 g strawberries
  • 1 egg white for brushing
Use your fingers to work cold butter into crumbs with sugar and flour. Add the egg yolk and 1 tablespoon of water and press the dough quickly together to make a smooth dough. Cover it with cling film and put it in the refrigerator for 30 minutes.
To prepare the filling, heat the cream and remove from the stove. Add the chopped chocolate, let it melt for a few minutes and stir until smooth. Slice the strawberries and combine with sugar, lemon juice and cornflour. Roll the dough into a round shape but not too thin (it is best done on a piece of parchment so that it could easily be put in a pie tin).
Cover the middle of the crust with chocolate cream so that the edge is left free. Place strawberry slices on the chocolate cream. Turn the edge of the crust up and press gently together over the filling.
