Strawberry and marzipan cake

Base:

  • 4 dl flour
  • 3 tbsp sugar
  • 1 tsp baking powder
  • 175 g butter
  • 1 egg

Filling:

  • 350 g strawberries
  • 75 g marzipan

Icing:

  • 3 dl sour cream
  • 3 eggs
  • 1.5 dl sugar
  • 1 tsp vanilla sugar
To prepare the base, mix the dry ingredients together. Cut in the pieces of butter and egg and stir the mixture until smooth. Press the dough onto the bottom and sides of a 22–24 cm springform pan that is lined with parchment paper (as there will be a lot of filling, make the sides sufficiently high). Refrigerate the dough for a few minutes.
Slice the strawberries and arrange them on the dough. Sprinkle on the chopped marzipan. Mix the ingredients of the icing together and pour over the strawberries. Bake in the oven at 175 °C for about 45–50 minutes. Before eating allow to cool to room temperature.
