Smoked trout salad with strawberries
- A smallish head of Romaine lettuce
- A handful of strawberries
- A good chunk of smoked trout
- 1 tbsp sugar cane syrup
- 1 tbsp lime juice
- 3 tbsp grape seed oil
- Salt and pepper
Tear the lettuce into smaller pieces. Dissolve the salt and syrup in lime juice and whisk in the oil to emulsify (evenly thicken) the dressing. Pour most of the dressing on the lettuce and mix carefully. Put the salad in a salad bowl, cover with chunks of smoked fish and halved strawberries. Drizzle the rest of the dressing on the salad and grind on a few turns of black pepper.
