Grilled quail, red plum and onion skewers
Serves 4
- 4 grilling fillets of quail
- 4 tbsp soy sauce
- 2 tbsp plum sauce
- 1 tbsp sugar
- cane syrup
- A few drops of Tabasco
- A quarter of a teaspoon of grated garlic
- A quarter of a teaspoon of grated ginger
- 4 red plums
- 2 red onions
- Coriander
Mix the ingredients of the marinade together, brush the quails from both sides with the marinade and let marinate for a few hours. Cut the plums into four and onions into eight pieces and thread the plum and onion sectors alternately on wooden skewers. When the grill is hot, take the quails out of the marinade and put the marinade aside. Grill the plum skewers first for 2 minutes, basting them with quail marinade from both sides. Then add quails to the grill. Cook them over medium heat for 3–4 minutes on each side. Serve with plum skewers and coriander.
