Crisp toast with onion jam and Brie

Onion jam:
- 4 onions
- Brown sugar
- Water
- A loaf of ciabatta or some other bread
- Olive oil
- Brie cheese
- Thyme or parsley for serving
To make the jam, peel the onions and cut them into thin slices. Simmer the onion slices, sugar and water in a pan for about 30–45 minutes, stirring from time to time, until the mixture starts to resemble marmalade. Cut 12 slices from the loaf of bread, sprinkle them with olive oil and bake in the oven at 200 °C for 3–5 minutes until crisp. Top each slice with onion jam and a slice of cheese. Grill in the oven until the cheese has started to melt. Garnish with herbs and serve immediately.
