Creamy yoghurt jelly with berries

Serves 5–6

  • 5dl natural yoghurt
  • 2 dl whipping cream (35%)*
  • 3 tbsp sugar
  • 3 dl berries (strawberries, blueberries, etc.)
  • 4 tsp gelatine powder
  • 3 tbsp water
About an hour before you start, take the yoghurt out of the fridge so that it would be at room temperature (not cold) by the time you mix it with the gelatine. Mix the gelatine and the water and let the mixture swell for five minutes. Whip the cream with 1 tbsp of sugar until soft peaks form and mix the rest of the sugar with the yoghurt. When the gelatine has swollen, melt it over medium heat (or over a hot-water bath), let cool for about half a minute and stir the gelatine-yoghurt mixture into the rest of the yoghurt, add the whipped cream and finally the berries – if you are using strawberries, you could cut them into smaller pieces before using. Scoop the mixture into dessert dishes and refrigerate for two hours.
* The dessert will be extremely creamy when prepared according to this recipe, and not the leanest one. Those who prefer a treat less rich may use half of the cream.
