Strawberry muffins

Makes 12 muffins

  • 100 g butter, softened
  • 1.5 dl sugar
  • A pinch of salt
  • 2 tsp vanilla sugar
  • 2 eggs
  • 1.5 dl natural yoghurt
  • 200 g strawberries
  • 3.5 dl plain flour
  • 2 tsp baking powder

Frosting:

  • 250 g mascarpone
  • 1 dl whipping cream (35%)
  • 3–4 tbsp lemon spread

Decoration:

  • 12 small strawberries
Whisk the soft butter with sugars and salt. Whisk in the eggs one at a time. Mix in the yoghurt and flour that has been mixed with the baking powder. Finally add the chopped strawberries. Divide the batter into a muffin tin lined with paper and bake in the oven at 200 °C for 25–30 minutes (test with a skewer to see if they are done).
To prepare the frosting, whip the cream lightly, add the mascarpone (at room temperature) and lemon spread to taste. Spread about a spoonful of frosting onto each muffin and decorate with a strawberry.
