Põhjaka Baltic herrings

- 5 tbsp salt
- 5 tbsp sugar
- 5 tbsp vinegar
- Black pepper
- Onion
- Cooking oil
Let the fish marinate overnight. Recipe for the marinade: for 1 l of water take 5 rounded tablespoonfuls of salt, sugar and vinegar each. On the next day, clean the fish and layer in a jar or a cup with an onion ring and black pepper between the layers of fish. When the jar is full, fill it with oil.

- Garlic
- White wine vinegar
- Salt
- Black pepper
- Sugar
Combine a few egg yolks with the garlic and mustard; add seasonings and a tablespoonful of white wine vinegar. Pour the mixture into a mixer and add some mild-flavoured oil in a fine steady stream while mixing or whisking continuously. When the mayonnaise is sufficiently thick, check the flavour and, if needed, add some salt, pepper or sugar.
