Cooling watermelon and strawberry sorbet

  • 1 dl water
  • 1.5 dl sugar
  • 0.75 l crushed strawberries and watermelon flesh in any ratio you prefer
  • 3 sprigs of fresh thyme
  • 0.5 dl Vana Tallinn liqueur
  • Lemon or lime juice, if desired
Heat the water and sugar until you get syrup, and let it cool. Crush the watermelon pieces, strawberries and thyme in a food processor or a blender, mix with the liqueur and cool to the temperature of a fridge. Mix the cold syrup and watermelon mixture together (if it seems that there is not enough acidity, you can add some lemon or lime juice) and prepare the sorbet.
