Cheese and strawberry muffins
Makes 12
- 100 g butter
- 125 g sugar
- 2 tsp vanilla sugar
- A pinch of salt
- 2 eggs
- 50 g sour cream
- 100 g melted cheese Merevaik
- 210 g flour
- 2 tsp baking powder
- 250 g strawberries
Cream butter (at room temperature) with sugar, vanilla sugar and salt.
Whisk the eggs into the butter mixture one at a time. Add the sour cream and Merevaik and stir to combine. Combine the flour with baking powder, add to the butter mixture and stir until the batter is smooth. Finally cut the strawberries into smaller pieces and fold into the batter. Divide the batter into a muffin tin lined with paper and bake in the oven at 200 °C for about 20–25 minutes.
