Orange and almond biscuits
- 200 g butter
- 1 dl Demerara sugar
- 1 egg
- 1 tsp baking powder
- A pinch of salt
- 4.5 dl plain flour
- 1 dl crushed almonds (from 50 g whole almonds)
- Grated zest of 1 orange (only the yellow part)
- Ca. 5 tbsp Demerara sugar for sprinkling on the biscuits
Beat the soft butter and sugar until creamy. Add the beaten egg and mix carefully. Combine all the other ingredients and add to the butter/sugar cream. Shape the dough into a ball and refrigerate for at least 30 minutes. Roll it out thinly, to ca. 2 mm thickness, using some flour. Cut into biscuits using suitable biscuit cutters. Sprinkle some Demerara sugar on the biscuits. Bake at 175 °C for ca 10 minutes until the biscuits are golden and crisp.
