Coffee-flavoured pork ribs with strawberry sauce
Serves 4
- 1 kg pork ribs
- Mixture for boiling the ribs:
- 12 g HP sauce (House of Parliament)
- 12 g sweet and sour sauce
- 25 g sweet wine
- 35 g sugar
- 10 g chicken bouillon powder
- 45 g ketchup
- 30 g celery
- 2 cardamom seeds
- 2 g star anise
- 2 g cinnamon bark
- 2 l water
- 5 g ginger
- 5 g green onion
- Water
Sauce for baked ribs:
- 240 g water
- 50 g tomato
- 50 g carrot
- 40 g crushed strawberries with sugar
- 65 g HP sauce
- 45 g Worcester sauce (Lea and Perrins)
- 34 g ketchup
- 50 g sugar
- 10 g ground coffee
- 20 g wine vinegar
Grill the pork ribs in the oven until brown and put them in flavoured water to boil (if needed, add enough stock or water to cover the ribs) and boil for about one hour. When serving, pour the sauce (prepared separately) over the ribs and garnish with fresh strawberries. If desired, steamed rice may be served as a side.
